This recipe is SO quick, so easy and super yummy! It’s my go-to snack of the moment!
All you need is:
- 6 rashers of bacon
- 1 ripe avocado
- 2 thick slices of granary bread
- 4 tbsp caesar salad dressing
- 8 romaine lettuce leaves
Dry-fry the bacon until it’s to your taste (I like it crispy!) While the bacon is cooking, warm the bread in the toaster, but be careful not to fully toast it! Then chop the avocado in half, remove the skin and stone and slice it up.
Spread half the caesar dressing on the bread, chop the lettuce (this doesn’t have to be neat!) and pile it up with the avocado onto the bread. Chop the bacon into pieces and add it on top. Drizzle the rest of the dressing over, and finish with a sprinkling of pepper.
To add a little extra colour, I sometimes throw some plum tomatoes and ready-roasted peppers (the kind in a jar) in too!
